Meatloaf Monday ya say? When it was revealed that Patrice had never had meatloaf before (audio of that derailment below) meatloaf Monday was born. Listener Ian heard about meatloaf Monday and he wanted to provide a vegan alternative. We try both – with Siracha, Ketchup, and BBQ sauce.

And now for the regular loaf…
MeeT Loaf:

2 pkgs impossible
1/2 large white onion – finely chopped
5-6 garlic cloves finely chopped
Nice pinch of salt (1ish tsp) and pepper (3/4ish tsp)
2 Tbsp Vegan Worcestershire(Portland brand preferred)
1/4 cup ketchup
3/4 cup Vegan bread crumbs ( Italian preferred, Whole Foods has an accidentally vegan one)
6 tablespoons Just Egg.
Mix thoroughly
Glaze:
1 Tbsp Ketchup
1/2 Tbsp Yellow Mustard
1 Tbsp Sriracha
1/2 Maple Syrup
Mix together
(Or just use your favorite vegan BBQ Sauce)
Preheat oven to 375°
Place in greased loaf pan.
Brush with glaze
Bake covered for 30 minutes. Remove cover and bake additional 15 minutes or until edges are crusted.
(internal temp is 160°)
