- Dandelions contain more beta-carotene than carrots, more potassium than bananas, more lecithin than soybeans, more iron than spinach, and loads of Vitamins A, C, E, thiamin and riboflavin, calcium, phosphorus and magnesium.
- The flowers, separated from their bitter green bases, are sweet to the taste. To get all the benefit from the green bases – which contain all that good stuff — you can mask the bitterness by serving dandelions between slices of bread, with sweet and sour or raspberry vinaigrette dressing, with meats, cheeses, pasta, seasoned tomato sauces, and fruits.
