Cookin’ with KAFE

Listen to Cookin’ with KAFE each Monday, Wednesday, and Friday.  Scotty VanDryver visits with Chef Jordan River Lawson from the Hotel Bellwether Lighthouse Bar & Grill to get the best tips and recipes they have to offer.  Here are this week’s recipes…

Cod En Croute

  • 6 oz. piece of Cod filet
  • 1 sheet phyllo dough
  • salt and pepper to taste
  1. Heat a sauté pan with some oil
  2. carefully place the wrapped fish in the pan for 15 minutes at 375 degrees
  3. The Phyllo and the fish will be done when golden brown and crispy
  4. Top with a quenelle of tomato jam

Tomato Jam

  • ¼ cup sun dried tomatoes in oil
  • ¼ cup apple cider vinegar
  • ¼ brown sugar
  • 1 T whole grain mustard
  • 1 T salt
  1. Puree in the blender
